Cinnamon Scented Baked Pears

Pears and Ricotta

Ingredients:

4 Medium Pears, ripe and juicy (check them by gently squeezing the neck to make sure they’re soft)

3/4 tsp Cinnamon, ground (divided 1/2 tea for pears, 1/4 tea for ricotta)

1 cup Ricotta Cheese

1 tsp natural sugar (less if desired, or use 1 tsp honey)

Preheat oven to 400 degrees.

Cut pears lengthwise in quarters and core (remember to leave the skin on – lots of nutrients are in the skin).  Slice pear quarters into 1/4 inch slices.  Arrange half of pears in 9 in glass pie dish. Sprinkle with cinnamon.  Repeat laying with remaining pear slices.  Bake until pears are tender, about 25 minutes.

Mix ricotta cheese with sugar, top with remaining cinnamon.  Place ricotta onto serving dish and top with warm pears.

NOTE: This is a recipe I found years ago on Weight Watchers and I’ve even omitted the natural sugar and simply drizzled 1 tbsp of honey over the ricotta and pear mixture. I’ve even seen this with granola or walnuts sprinkled over the top.
