Skewered Strawberry Caprese Salad

*1-2 pints of organic (freshly picked are super sweet) strawberries
*Approximately 1 cup mozzarella balls (goat cheese would be great with this too)
*Basil leaves
*Chocolate” Balsamic Vinegar


Alternate strawberries, basil leaves, and mozzarella balls onto skewers ( I like the shorter skewers or cutting the 12″ in half).  Arrange on serving dish and drizzle with Chocolate Balsamic.

*If you love the taste of chocolate covered strawberries, you’ll love this Balsamic Vinegar for a healthier alternative. Balsamic is  made from grapes and is fermented in wooden barrels (like wine).  The longer it ages, the thicker and more intense the flavor – meaning you don’t need to use as much for a great punch in flavor.  One tablespoon of Balsamic equals only 14 calories!!  There are plenty of health benefits as well.  I found this article on LiveStrong very useful in my quest towards better health.
