This tasty winter salad combines juicy cranberries, crunchy apples, and nutty wheat berries for a healthy and satisfying meal or side-dish.
1 cup dried cranberries
1 medium to large apple (in season – I used Braeburn)
1 cup cooked wheat berries
½ cup walnuts
Goat Cheese (optional)
3 cups shredded Romaine lettuce
Cranberry Pear Vinaigrette
½ cup Lemon Fused Extra Virgin Olive Oil *
¼ cup Cranberry Pear White Balsamic *
2 tea sugar (optional)
I can’t stress how important it is to use quality Extra Virgin Olive Oil & Balsamic Vinegar. Find a shop where you can be educated on the products and their health benefits as well as taste the selection they offer. (Locally, I shop at the Blue Olive in Pawling, NY) Here’s a great article about why you should be doing this.
Other variations of this salad –
Add blood oranges & feta cheese. Replace the above EVOO with a Blood Orange Fused Olive Oil for the vinaigrette.
Figs, golden raisins, & walnuts. A vinaigrette made of Fig or Tangerine Dark Balsamic paired with a good EVOO will bring out the flavors in the fruit.
Roasted butternut squash & spinach, drizzled with a Fig Dark Balsamic & Blood Orange EVOO vinaigrette are the perfect pair for this savory dish.
